Abstract
1,034,035. Cooking in fat and oil. MERIDITH & DREW Ltd. and RADYNE Ltd. March 26, 1965 [March 26, 1964; May 1, 1964], Nos. 12803/64 and 18305/64. Heading A4D. Potato crisps and sticks are produced by frying the potato pieces in oil until the water content is reduced to between 20% and 5% and then reducing the water content to the order of 2¢% by the combined effect of hot air and high frequency heating. For the high frequency heating dielectric heating or a magnetic microwave generator may be used with the potato pieces passing through a common box-shaped cavity, or through a parabola section chamber, which launches a uniform horizontal field across a wide conveyer. While the potato pieces are being dried they may be turned by using several successive conveyers at different levels so that the pieces drop from one to the next.
