Abstract
599,634. Baking by dielectric heating. STANDARD TELEPHONES & CABLES. Ltd. Aug. 10, 1945 No. 20576. Convention date, Dec. 11, 1944. [Class 39 (iii)] Bakery products are heated more strongly at the surfaces-or one surface-rotative to the other parts by placing the product in engagement with dielectric material of predetermined loss factor and subjecting the whole to highfrequency energy. In one embodiment, the product is interposed between upper and lower dielectric plate sectors 9, 10 of a terminal support, which is rotated to bring the product between adjustably spaced electrodes 1, 2 connected , to a high-frequency oscillatory generator 5. The pairs of sectors may, for example, be of different loss-factors for different degrees of surface heating. The dielectrics may be perforated or corrugated to permit escape of moisture. In another embodiment, flexible dielectrics are used so that the sides of the object may also be surface-heated.
