Abstract
The heat treatment of substances such as foods and medicines in watertight coverings, e.g., sealed in glass jars, cans or foil wrappers, is effected in aqueous solutions of salts of phosphoric, citric and tartaric acids, to detach dirt, grease and any overflow of contents and so facilitate varnishing, labelling, printing or application of transfers afterwards. Suitable orthophosphates are those of sodium, ammonium, hydrazine, hydroxylamine, guanidine or triethanolamine. Examples are concerned with (i) heat-treating in a rotating autoclave a batch of crown-corked bottles of milk in an aqueous solution of disodium phosphate and sulphamic acid of pH 7; (ii) heating cans of meat in an autoclave, there being dissolved in the auto-clave water disodium phosphate, trisodium phosphate, sodium tripolyphosphate, sodium carbonate and sulphamic acid; (iii) heating cheese packed in nylon foil in an aqueous solution of disodium phosphate and sulphamic acid of pH 7.
