Abstract

1400038 Sterilization ETABS J J CARNAUD ET FORGES DE BASSE INDRE and M BEAUVAIS 26 Oct 1972 [29 Oct 1971] 49403/72 Heading A2D Canned products are cooked or sterilized by (a) filling cans with the products and adding to each can a small amount of an aqueous liquid, (b) non-sealingly securing covers to the cans, (c) passing the cans with their longitudinal axes inclined to the horizontal past a heat source so as to boil liquid collected at the bottom of each container, (d) sealing the covers tight to their containers, (e) heat sterilizing and (f) cooling the cans. The cans are rotated about their longitudinal axes at least during steps (c) to (f). The cooling may be effected by spraying with cold water. The aqueous liquid e.g. water, may be added in an amount from 5 to 20% of the filled volume of the cans.
