Description

Process for removing deposits in food and beverage equipment Luxury food industry In many companies, especially in the food and luxury food industry if there is an inconvenience that approaches are formed on the walls of the apparatus, which are wholly or partly made up of organic substances, in particular protein and fat bodies, exist. These include B. the milk stone and the beer stone. These deposits In addition to the known disadvantages, they also have the particular disadvantage that they are capable due to their organic content, bacterial foci especially must be prevented in the food and beverage industry. These deposits therefore have to be removed very often.

As a result of their content of the above-mentioned organic components these approaches are difficult to attack. So their removal has been done so far by treatment with stronger acids or very concentrated alkaline solutions. In many cases, it was necessary to use higher temperatures. These previously known Processes have, however, due to the aggressive action of the acids and alkalis the disadvantage that the metals from which the apparatus is made are easily corroded, especially if they are easily vulnerable metals such as tinned copper, aluminum and the like; acts like it z. B: is the case in dairy farms and breweries.

It has now been found that it is possible in a simple manner that Deposits swell up and thereby immediately removed, namely by the fact that the apparatuses and apparatus parts covered with deposits with solutions of salts those phosphoric acids which are lower in water than the o-thophosphoric acid; treated. iSalts of such phosphoric acids are, for example, the pyrophosphates, the metaphosphates, both the trimeric and the hexameric metaphosphates, and the polyphosphates.

The above-mentioned phosphates can act in such a way that the apparatus is filled with hot solutions and these are left to stand for a while or are moved therein. After draining the solutions, the approaches; For example, the milk stone, unless it has already been washed away by the movement of the liquid; can be removed by light mechanical treatment, such as princes. If necessary, the effect of the phosphates can be increased more by adding wetting agents and the like. You can also add other compounds, such. B. Corrosion-protecting salts in apparatuses that are particularly at risk of corrosion. .... Example A tinned copper apparatus for heating milk, e.g. B. Pasteur stirrer, on the walls of which there are strong approaches of milk stone, is filled with a 5% solution of sodium metaphosphate, which is heated to almost 100 °, that the liquid is filled with all by the movement of the stirrer parts covered with milk stone comes into contact. After an exposure time of 1/2 hour, the solution is removed. The milk stone has softened to such an extent that it can be easily removed by light mechanical treatment such as brushing or scrubbing.

Instead of sodium methaphosphate can also be used with the same success hot solutions of sodium pyro and sodium polyphosphate, e.g. B. the composition Na s P4 013, to be used; More dilute solutions can also be used. The duration of exposure depends on the strength of the deposits.
