Abstract

Stainless steel heat exchangers of the plate type used for the heating or cooling of milk, milk products, liquid foodstuffs, beer, wine and other liquids, are cleaned by the single circulation of a 1/2 -5% aqueous solution of a composition comprising by weight, 30-80% alkali metal hydroxide, 5-20% alkali metal silicate, 5-30% alkali metal polyphosphate which will not decompose below 200 DEG F., and 10-25% amino carboxylic or polyhydroxy acid or alkali metal salt thereof, with or without anionic and/or non-ionic wetting agents. A proportion of the alkali metal hydroxide may be replaced by an alkali metal carbonate or bicarbonate. The specified composition consists of 35.5% sodium hydroxide, 15% anhydrous sodium carbonate, 13.5% sodium metasilicate pentahydrate, 22.5% sodium tripolyphosphate and 13.5% ethylenediamine tetraacetic acid.
