Abstract

In preserving milk, or other dairy product exemplified by cream, coffee cream, cocoa milk and fruit-flavoured milk, in containers such as bottles, cans, tubes and barrels, the milk or milk product is sterilized by heating and is placed, while still hot enough to ensure sterile filling, in the containers so as to fill them completely, whereupon the containers are closed, and are then cooled. The containers and closures therefor may be sterilized before the filling. The milk or milk product is sterilized at above 100 DEG C. in a heater operating under superatmospheric pressure. Apparatus for carrying out the procedure includes a conveyer for moving empty containers to a sterilizer therefor, the heater, a device thereon for filling the containers, a container closing device, and a cooling channel through which cold water is passed in the direction counter to the direction of conveyance of the closed containers.
