Abstract

Eggs are processed for market, by removing the shells, sealing, in an innocuous gas atmosphere, the egg masses in a container so that the egg masses and a part of the gas are sealed therein. The egg mass may be separated into low and high-grade groups, that in the low grade being separated into marketable and unmarketable portions, the marketable portion being added to the high-grade group. The egg mass may also be separated into yolk and albumin portions, and such portions separately sealed in the containers. The containers and their sealing covers are substantially nonporous and may be of transparent plastic, e.g. polythene, and have rip-cords provided for easy cover removal.
