Abstract
A lactic-acid producing starter is added to a single mix containing milk after the mix has been pasteurized and neutralized, to provide an ice cream with a standard flavour. The mix is made in the usual manner from milk, cream, buttermilk or condensed milk, which is pasteurized and neutralized in separate or simultaneous steps. Neutralization is effected by addition of calcium or magnesium oxides. The starter may be made by adding a lactic-acid producing organism to pasteurized and neutralized milk.
