Abstract
In the manufacture of milk chocolate the milk constituent comprises a spray-dried milk powder in which the average porosity of the grains, represented by the content of their air cells, does not exceed about 10 per cent by volume. The purpose is to minimize the absorption by the milk of the fat content of the mixture. According to an example, a suitable mixture comprises 11.25 per cent cocoa, 46.75 per cent sugar, 13.50 per cent cocoa butter and 28.50 per cent spray-dried milk powder containing 5.5 per cent air.
