Abstract

532,458. Rennet. BENGERS FOOD, Ltd., THORNLEY, B. D., and HILTON, S. July 22, 1939, No. 21320. [Class 2 (iii)] Rennet is prepared by extracting the initial material with a salt solution of concentration up to 10 per cent. at pH 4.6-7 and then adding a suitable acid to bring the solution to a pH less than 3.6, preferably 1.5, to precipitate the rennet. Suitable salts for the extraction are sodium and ammonium chlorides and sulphates and magnesium sulphate. The precipitate may be allowed to stand for a time, such as 1-3 days in a solution of pH less than 2, such as the mother-liquor. Suitable acids are hydrochloric, nitric, sulphuric and trichloracetic acids. Additional salt may be added to the extract before or after the precipitation. Examples describe the preparation of rennet from dried vells, using sodium chloride and sodium sulphate for the extraction and hydrochloric, trichloracetic and sulphuric acids as acidifying agents.
