Abstract

Vegetable matter containing protopectin is hydrolyzed in a weakly alkaline medium of pH less than 12 and at a temperature below 60 DEG C. to produce a fibrous pectate, i.e. a pectate which is obtained in fibrous form on precipitation with alcohol. The pectated pulp may be dried, or the pectate may be extracted therefrom, precipitated by alcohol, and dried. Specification 472,912 is referred to.
