Abstract
In an evaporator for concentrating milk and other liquids in which the heating means arranged in its lower part are constituted by a jacket e and an annular drum f to which heating medium is supplied, the liquid is stirred by an eccentrically mounted agitator w comprising a flat bar with depending arms 2 rotating between and scraping the surfaces of the drum and container and superimposing <PICT:0446826/III/1> another agitator 3 comprising a helix rotating within a tube k mounted centrally within the drum. The vessel may be under vacuum or pressure and the liquid admitted by pipes 4 and t rises uniformly up the annular heating chamber g, the outlet cocks v being closed. During withdrawal of the material, the latter are opened and the concentrate discharged through the tube k. For use as a crystallizer, cooling medium is supplied to the jacket or drum.
