Abstract

In processes for concentrating by evaporation under vacuum liquids, e.g. milk containing dissolved solids which separate out on cooling, the cooling of the concentrated liquid is effected under a higher vacuum than that <PICT:0390898/III/1> employed in the concentration step and with mechanical agitation. Liquid is circulated through a steam-heated calandria 8 and an evaporator 1 by a pump 9, the evaporator being maintained under vacuum by a pump 11 operating through a condenser 10. The concentrated liquid is discharged through a pipe 4 to coolers 2, 3 used alternately and provided with stirrers 12. The coolers may be cooled by circulation of brine through jackets 13 and are maintained under vacuum by three steam ejectors 14, 15, 16 co-operating with surface condensers 17, 18, 19. In the concentration of milk the evaporator is heated to 140 DEG F. under a pressure of 24-28 inches of mercury and the coolers are first cooled to 85 DEG F. under a vacuum of 29,5 inches and then to 45-60 DEG F. under a vacuum of 29,7 inches. The first part of the cooling may take place in the evaporator 1. Seed crystals may be added to the coolers.
