Abstract
The raising power of dry yeast prepared by the process of the parent Specification is activated by loosening or disintegrating the dry yeast in a liquid, such as water or milk, to a fine homogeneous suspension by mechanical agitation, e.g. stirring. The yeast is aerated at the same time by introducing air into the suspension by vigorous eddy motions. Small quantities of sugar may be added to the suspension. The temperature used is preferably 35 DEG C.
