311,916. Frame, A. W. April 24, 1928. Sugar preparations. - A saccharine mass specially suitable for use in the confectionery, baking and allied industries, is made by heating with agitation a mixture of a sugar such as cane, milk br corn sugar, or saccharine material with water and maltose, raising the temperature with continued stirring and then rapidly cooling. The treatment inhibits or retards the growth of crystals in the mass. The maltose employed is preferably that kind known under the registered trade mark Spramalt-B.
