Abstract

Jelly powders for use in making table jellies and other edible jelly products are prepared by mixing the ingredients under such conditions as to dissolve the whole or substantially the whole of the gelatine and produce a hot substantially homogeneous mass which after cooling is reduced to a powder which in the main consists of particles each of which contains the several requisite ingredients of the jelly. In an example, 3 lbs. of gelatine are dissolved in 4 lbs. of water or fruit juice or both, preferably at 50-85 DEG C., and 20 lbs. of sugar and 6 ozs. of fruit acid and colouring and, if desired, further flavouring materials are then added. The mass is cooled or allowed to cool to form a dough which is reduced to suitably sized pieces which are allowed to condition, e.g. in a warm atmosphere for 24 hours, during which period drying occurs. The mass is finally ground to give a powder which is non-hygroscopic and non-caking. Disintegrated fruits may be included in the product.
