517,086. Milk and cream preparations ; cultivating bacteria. KRONBERG, N. M. Aug. 16, 1938, No. 24158. Convention date, Aug. 16, 1937. [Classes 49 and 81 (i)] A dried product is obtained from skimmed milk, unskimmed milk or cream by adding thereto a culture of lactic-acid producing bacteria in a medium other than milk and evaporating the mixture to dryness by a spray process. The milk or cream particles may be electrified during the drying by connecting the spraying apparatus and the walls of the drying chamber to different poles of an electrical source. The milk or cream may be partially evaporated before the culture is added. The culture may be prepared in a sterilized aqueous solution of cane sugar, which is allowed to become inverted before the culture medium is added to the milk or cream.
