Abstract

A milk powder preparation having improved keeping qualities is obtained by separating the cream from milk, spray drying the two liquids and subsequently mixing the powders obtained, the two liquids being adjusted to different hydrogen ion concentrations such that the powders when dissolved in water neutralize each other to the desired extent and exhibit as a whole acidity corresponding to pH 6,4-6,6 which is the normal value for milk. The cream is preferably adjusted to a pH below 5,5 or above 7 while the skim-milk is adjusted to a pH of above 8 or below 7 respectively. The pH value is increased by adding sodium bicarbonate &c. and decreased by adding acidic materials or by developing acid by fermentation. The liquids may be pasteurized, e.g. by heating to 75 DEG C. for less than 30 secs., before drying. The skim-milk may be concentrated at not above 55 DEG C., preferably 40 DEG C., prior to drying. The liquids may be dried in separate plants, or in one plant in which there are two atomizers, one for each liquid, or one atomizer having separate atomizing elements, wheels, turbines or discs, each with a separate inlet for the liquid, may be employed. Fat soluble vitamin, cystine and other anti-oxidants may be added to the cream before drying.
