Abstract
Confectioners' hard fats are made from vegetable oils and fats in which at least 50 per cent of the combined fatty acids is lauric and/or myristic acids, e.g. coconut, palm kernel, babassu, and tucum kernel oils, by the process of the parent Specification without fractional crystallization of the re-arranged fats. Examples are concerned with agitating refined, dried coconut oil and refined, bleached palm kernel oil at 120 DEG F with 0.3 per cent of sodium methoxide as a 10 per cent suspension in xylene, allowing re-arrangement to take place for some days, while cooling gradually to 60 DEG F, inactivating the sodium methoxide by adding glacial acetic acid, and refining, bleaching and deodorizing the re-arranged fat. The fat may be hydrogenated before or after re-arrangement. Specifications 590,737 and 590,916 are referred to.
