Abstract
168,362. Clark, A. J. May 19, 1920. Food preparations.-A fat preparation for culinary purposes, consisting of an emulsion of fats and oils with an aqueous liquid, is prepared by stirring the fats, such as suet, dripping, or coconut fat, and oils such as groundnut oil, cotton seed oil, or soya bean oil, with a mucilage formed of hemi-cellulose or carbohydrate gums or mucilages with water. The mucilage may be prepared from edible algµ such as Chondrus crispus or from seeds such as Ceratonia siliqua. The mixture is prepared at a temperature of 80‹ to 100‹ C., and is stirred while cooling. Boric acid, borax, salicylic acid or other preservative may be added.
