Abstract
Mushrooms and other edible fungi are prepared for food by placing them in animal or vegetable oil or fat or in refined liquid paraffin and maintaining them at a temperature higher than that of boiling water until the water in the fungi has been replaced by the oil or fat. The fungi are then removed and after superfluous grease has been drained off they are dried above 50 DEG C. until they become friable. Flavourings, spices, mineral salts and other food constituents may be added to the fat or to the fungi during the drying process.
