Abstract
Milk is pasteurized by placing it with its surface protected by a floating lid in a metallic or earthenware vessel which is placed in a pan of boiling water, removing the heating source for the water when the milk is at the pasteurizing temperature, about 60 DEG C., and allowing the milk vessel to remain in the water for 30 minutes during which time the milk is maintained at the pasteurization temperature. The volume of hot water used is three times that of the milk. The milk vessels employed may be standardized as to their dimensions and material so that the amount of heat absorbed in a given time from the hot water by each vessel of the same size shall be the same.
