Abstract
Egg yolks or whites or both are preserved by insertion in a sterilized vessel into which carbon dioxide or equivalent gas is introduced before or simultaneously with the egg material, the vessel being hermetically sealed when all the air is excluded. When using small vessels, these are sterilized, dried and introduced into a large container to which carbon dioxide preferably under pressure and after being dried with calcium chloride is supplied, displacing the air. The egg material is then added and the vessels are sealed. The eggs are preferably sterilized before being shelled. In large scale operation, the egg material is added to a sterilized and dried storage vessel simultaneously with the carbon dioxide with which it is mixed by mechanically heating it in a container with the gas or by introducing the gas into it under pressure. The egg material may be pasteurized at a temperature up to about 63 DEG C., after treatment with the gas and before the vessel is sealed.
