Abstract

A stable water-in-oil emulsion food product which remains pourable over a wide temperature range comprises a major amount of a liquid glyceride oil phase, a minor amount of an aqueous phase containing milk solids, and a small amount sufficient to inhibit viscosity increase and solidification of said emulsion of a hard fat. The liquid glyceride may be soybean oil, cottonseed oil, corn oil, safflower oil, rapeseed oil, sunflower oil or sesame oil, or mixtures thereof; the hard fat may be hydrogenated tallow, hydrogenated lard, or hydrogenated rapeseed, cottonseed, soybean, peanut, olive, coconut, palm, corn, safflower, sunflower or sesame oil and may amount to 0.75% to 7.5% of the composition. The aqueous phase may be whole milk, skim milk, cream, reconstituted non-fat dry milk, soya milk or mixtures thereof, and may contain salt. The emulsion may also contain monoglyceride emulsifiers and lecithin. The emulsion may be prepared by mixing the components, chilling to produce a gel structure then working to break up this structure.
