Abstract

A low-energy fatty foodstuff suitable for spreading on bred consists of a water-in-fat emulsion containing 20 to 50% of its weight of fat most of the remainder being water, the aqueous phase containing a thickening agent and the fatty phase containing an emulsifier of the kind that promotes the formation of water-in-fat emulsions. A number of suitable emulsifying agents, thickening agents, and fats are listed; those exemplified are: emulsifying agents - polyglycerol ester of condensed caster oil fatty acids, distilled fatty acid monoglycerides based on lard fatty acids, polyglycerol esters of condensed caster oil fatty acids, lecithin, stearic acid mono- and di-glycerides, and cottonseed oil mono-di-glyceride; thickening agents - propylene glycol alginate, and carboxymethyl cellulose; and fats - butter fat, and blends of various vegetable, animal and fish oils including hardened oils. Salt, flavouring agents, colouring, vitamins, preservatives and sequestering agents may also be present. Preparation of the fatty foodstuff is effected by emulsification of the aqueous phase containing the thickening agent in the fat phase containing the emulsifier, the fat phase being liquid or partially crystallized, and subsequently chilling and crystallizing the emulsion formed. Alternatively the thickening agent may be first incorporated in the heated fat phase containing the emulsifier and then the water and any desired water soluble constituents are emulsified in the fat phase and the emulsion chilled and crystallized.
