Bakery plant; proving appliances.-In breadmaking plant of the type wherein a continuous oven b and a prover a are arranged for operation in series, the loaves or dough portions being carried in a circuitous path through the prover and oven on an endless chain conveyer d to provide for the production of either tin or ovenbottom bread, as may be desired, the conveyer is so directed that in travelling from the prover to the oven it brings the portions into a position g where they can be transferred to that part i of the conveyer about to enter the oven whereas the conveyer proceeds from such position to the oven entry in a looped or circuitous course. For ovenbottom bread the dough portions are proved when they reach the position g, and. in order that the trays e receiving the transferred portions at the position i may be hot, heating elements m are arranged above the conveyer at the part approaching the position i. An adjustable pulley carrier o provides means for varying the period of proof of the dough portions when producing tin bread. In a modified form of the apparatus the looped portion of the conveyer is guided by guide-wheels and a fixed curved track, and by adjustable pulleys in the first part of the prover provision is made for varying the period of proof of the dough portions for both oven-bottom and tin bread.
