Abstract

1446996 Vacuum treating flesh J A G GATINEAU and P HAMEL 16 July 1974 [9 Aug 1973] 31506/74 Heading A2E Flesh products (particularly hams) which may be raw are placed in vessels which act as moulds for the products, and subjected to the repeated action of a vacuum to deaerate the flesh. Between successive vacuum actions air or nitrogen and/or carbon dioxide optionally under pressure may be injected into the vessel to provide a scavenging action for the oxygen. The pieces of flesh may be prepared by subjecting them to a kneading or churning step under vacuum prior to placing them in the vessels. Suitably the vessels are sealed by placing a flexible lid of gas tight material on the vessel followed by a rigid cover, suitably perforated.
