Abstract

In the prepn. of meat prods., such as roast poultry or roast butchers meat, and with pork butchers prods., such as ham, pates, sausages etc., the pieces of meat and the corresp. additives are placed in special recipients and subjected to the repeated application of a vacuum to remove any air and ensures their compaction. This has a considerable influence on the texture of the prod.; it increases its tenderness and its water retention power. The process is improved by the methodical elimination of the residual oxygen and provides for the injection of a neutral gas between two consecutive vacuum treatments. The pieces of raw meat are subjected to mechanical mixing during several stages in which the action of a vacuum alternates with the injection of a gas, such as N2 and/or CO2, possibly under press. They are then placed inplastic recipients and are degassed in an enclosure, the vacuum is broken by the gas injection and the meat regains its normal vol. After further alternate treatments by vacuum and gas injection, a cover is placed in position followed by a sealed lid of gas-impermeable material. The closed recipients then go to the cooking process after cooling they are further packaged ready for despatch. The injection of the neutral gas assists in the elimination of any oxygen occluded in the meat and improves the keeping qualities of the prod.
