Abstract

Canned clam meat food products suitable for human consumption are prepared from previously underutilized clam species, such as the ocean quahog, which develop a disagreeable odor, flavour and colour upon canning, by adding a treating agent selected from the group consisting of sodium bisulfite, sodium metabisulfite, and mixtures thereof, to the clam meat prior to in-can retorting. The treating agent can be added to clam meat in the can immediately prior to sealing and retorting, or during the boiling of a slurry of clam meat in water or expressed juices before the meat is placed in the can. In another embodiment, the edibility of clams such as the ocean quahog is improved by boiling a slurry of clam meat in water or expressed clam juices to drive off the substances which cause the development of disagreeable odor, flavour and colour upon canning.
