Abstract
Improving the quality of meat intended for nitrite treatment, comprises treating it with glucose oxidase, glucose or a glucose-forming substance and a catalase >=1 hr. before the nitrite treatment. The combination of additives renders the meat oxygen-free and the amt. of nitrite necessary is only a fraction of the normal amt. The treated meat is pref. packed in air-tight packings and the nitrite may be retarded by coating with fat or Ca alginate. The treated meat is well preserved and maintains an excellent colour.
