1384204 Preparing pastry shells VSESOJUZNY NAUCHNO - ISSLEDOVATELSKY ISTITUT KONDITERSKOI PROMYSHLENNOSTI 19 May 1973 23969/73 Heading A2B A method of preparing pastry shells from melanged dough involves the operations of preparing a dough mix by a single-batch charging of the entire amount of flour into a hot blend of butter, common salt and water under continuous mechanical stirring, the flour to water weight ratio in the mix being 1:1; cooling the dough mix; adding the melange to the cooled dough mix to obtain melanged dough; shaping pastry shells from the melanged dough and baking the shaped shells.
