Abstract

1410228 Making dough SCHRODER & CO 4 Jan 1974 [27 April 1973] 00480/74 Heading A2B A water in fat emulsion is prepared and cooled to a temperature below the melting point of the fat whilst mechanically working the emulsion, flour is added, and the dough is mechanically worked at a temperature not in excess of the melting point of the fat. In the preparation of a sweet dough, a preliminary emulsion containing only part of the water, insufficient to dissolve all the sugar of the dough, is formed, and the remainder of the water is added to the preliminary emulsion prior to cooling. A gas such as air may be introduced before or as the emulsion is cooled or during the working of the dough. The emulsion may be mechanically worked after cooling but before the addition of flour.
