Abstract

1330794 Controlled release acid compound NESTLE SA 28 Jan 1972 [10 Feb 1971] 4039/72 Heading A2B An acid compound with controlled release is prepared by mixing with an edible fat solid at ambient temperature and containing an emulsifier an edible acid which is solid at ambient temperature or which is mixed with a solid carrier. The product is particularly useful for the controlled progressive acidification of reconstituted spray-dried yoghourt to obtain a satisfactory texture. Also present in the product may be, colouring, flavouring, and antioxidants.
