Abstract

1,259,074. Confection manufacture. FOREMOST-McKESSON Inc. 5 March, 1970 [14 March, 1969], No. 10615/70. Heading A2B. A confection mix comprises sugar, fat and electrodialyzed whey solids. Said whey solids preferably have an ash content of 0.9 to 6.5%. A confection or fudge type candy may be prepared by cooking said confection mix and a water soluble caseinate with water at 258- 265‹F, cooling at 200-210‹F with the addition of crystalline sugar and further cooling to solidify.
