Abstract

1277772 Whey product KRAFTCO CORP 12 Aug 1969 [26 Aug 1968] 40196/69 Heading A2B A fluid beverage composition is prepared by homogenising a fluid mixture of whey solids and fat, comprising 5-20 wt. % whey solids and 1-5 wt % fat, and tempering by storage at less than 50‹F for at least 24 hours. The product may be dried to give a reconstitutable powder. Flavouring, bodying agents such as gum, suspending agents, and emulsifiers, may be present. Additional protein, e.g. soy, yeast, non-fat milk solids, and concentrated whey proteins, may be added. The dried powder may also be employed in for example cake mixes and gravies to provide a milk flavour.
