Abstract
1396729 Protein products A SCHAPIRO 23 June 1972 [23 June 1971] 29611/72 Addition to 1293476 Headings A2B and A2E [Also in Division C3] A water-dispersible protein product comprising not less than 90% by weight of an edible, water-insoluble or difficultly dispersible protein, the protein being in the form of particles uniformly coated with a non-toxic, oil-soluble, surface-active agent, is produced by (i) preparing a concentrate comprising a uniform blend of a substrate which is an acceptable food ingredient and the surface-active agent, (ii) adding to the concentrate an increment of the protein which is a small fraction of the weight of the desired protein product, to produce a uniform blend of protein increment, substrate and surface-active agent, and (iii) adding the remainder of the protein and blending to produce the protein product containing at least 90% by weight of protein. Many surface-active agents are particularly mentioned. The protein product may in turn be mixed with a water-insoluble or difficultly soluble food product to enhance the dispersibility of the latter in water or aqueous medium. Examples 1 to 5 describe blending soyabean protein incrementally with a small quantity of the protein or with baker's sugar or non-fat milk solids (35% casein, 65% lactose) that had in each case been uniformly coated by mulling with soya bean lecithin as surface-active agent. According to further Examples, the instantized protein product is mixed with (6, 8, 9 and 10) cocoa, sugar and, optionally, non-fat milk solids, (7) sodium caseinate with or without sugar, and (11) meat flavour. The protein product may be mixed with the sugar product described and claimed in Specification 1293476.
