Abstract
1297579 Aerated chocolate composition J LYONS & CO Ltd 15 Sept 1971 [23 Sept 1970] 45263/70 Heading A2B An aerated chocolate composition may be prepared by incorporating up to 5 wt% of one or more polyglycerol ester emulsifiers in a molten chocolate composition and then whipping, whilst maintaining the composition above its melting point, until the desired volume of air has been incorporated. At least one secondary emulsifier, for example lecithin or sorbitan monolaurate, may also be present, the total proportion of polyglycerol ester and secondary emulsifiers present being up to 5 wt%. The product may be a chocolate confectionery or employed as a couverture for example for bakery or frozen goods.
