Abstract
In a process for producing a low-calorie and vitamin- enriched dietetic product in the form of ice-cream, from a basic mixture containing sprayed albumin, skimmed-milk powder and fructose and water, a mixture is produced, the mixture is pasteurized, a vitamin mixture is added and then the mixture is homogenized. The resultant mixture is then allowed to stand with cooling and finally allowed to freeze, with air being stirred in, and with cooling, to form an ice-cream.
