Abstract
Dietetic bread contg. Mg comprises natural wheat flour contg. no additive, water, natural yeast, wheat gluten, cream milk powder, salt, corn oil and magnesium chloride. Pref. the dough is kneaded for 2 mins. at one speed and for 10 mins. at another speed; checked in the tray for 45 mins. and proved for 1 hr. after shaping and before cooking.
