In an installation comprising a multipleeffect evaporator 1<SP>1</SP> . .. 4<SP>1</SP> associated with an auxiliary evaporator 6<SP>1</SP> and an evaporatorcrystalliser 5<SP>1</SP> which is heated by a portion of the vapours taken from one of the effects (e.g. effect 2<SP>1</SP> as shown), auxiliary evaporator 6<SP>1</SP> is supplied with vapour from crystalliser 5<SP>1</SP> and, if required, with vapour obtained by autoevaporation in vessel 25 of the condensate withdrawn from the heating-chambers of evaporators 1<SP>1</SP> . . . 4<SP>1</SP> into heat-storer 35, and the concentration of the solution withdrawn from evaporator 6<SP>1</SP> is regulated by a regulator 13<SP>1</SP> which controls the valves admitting the vapour to evaporator 6<SP>1</SP>. For example, a drop in concentration of the solution detected by regulator 13<SP>1</SP> results in the opening of valve 14<SP>1</SP>. If the corresponding increase in the flow of vapour coming from crystalliser 5<SP>1</SP> into evaporator 6<SP>1</SP> is inadequate to compensate for the drop in concentration, regulator 13<SP>1</SP> acts on valve 28 and thus permits some of the condensate contained in heat storer 35 to flow to, and evaporate in, vessel 25. The opening of valves 14<SP>1</SP> and 28 brings about an increase in the evaporation in evaporator 6<SP>1</SP>. When the concentration of the solution attains the desired set value, regulator 13<SP>1</SP> acts first on valve 28 so as to close it, and subsequently on valve 14<SP>1</SP> so as to reduce the inflow of vapour from crystalliser 5<SP>1</SP> into evaporator 6<SP>1</SP>. Regulator 8<SP>1</SP> controls valve 10<SP>1</SP> which admits live steam into evaporator 1<SP>1</SP> in accordance with the flow to this effect of the solution to be concentrated, which is regulated by valve 17<SP>1</SP>. Vapours may be discharged from effects 1<SP>1</SP>, 21 and 3<SP>1</SP> at 20<SP>1</SP>, 21<SP>1</SP> and 22<SP>1</SP>; but the flow of vapour from effect 41 should be nil. In an alternative embodiment, the solution may be fed in parallel to evaporators 1<SP>1</SP> and 6<SP>1</SP>, in which case the solutions discharged from evaporators 4<SP>1</SP> and 6<SP>1</SP> are mixed, and the concentration of the mixture regulates the supply of vapour from the crystalliser to evaporator 6<SP>1</SP>.
