In a multi-stage evaporator of the type wherein the liquid-to-be-evaporated, e.g. sea water, is heated by passing it through externallyheated tubes 16 and is then submitted to progressive partial vaporization in a series of flash chambers 10, the vapours so formed being conducted into the heaters 12 in order to preheat the liquid, the tubes of at least two of the heaters are connected in parallel and the liquid to be evaporated is divided into at least two parallel streams prior to its entry into the tubes, these parallel streams being reunited before the liquid is introduced into the first flash chamber. In the evaporator shown in Fig. 3 there are six groups of flash chamber 10a and 10b, associated with heaters 12a and 12b respectively connected in series to form two sets of heaters; and two parallel streams of liquid flow through the tubes 16a and 16b of the heaters. The two streams are then recombined and passed through heat-input section 22. The hot liquid then flows progressively through the flash chambers. In an evaporator having four flash chambers per group, the feed-liquid is divided into four streams. In Fig. 4, the evaporator is provided with a heat-rejection section 28 for reducing the temperature of the part of the unevaporated liquid that is recirculated through the heaters. This heat-rejection section consists of four flash chambers 30 divided into two groups, the cooling medium, e.g. sea water, being divided into two parallel streams 32 and 34 which pass through tubes in heaters 36 and 38 respectively. The inlet-valve 40 may be operated automatically by means 42 sensitive to the temperature of the cooling water or by means 44 sensitive to the temperature of the liquid in one of the flash chambers. After the cooling liquid has passed through the tubes of heaters 36 and 38, part of it enters the last flash chamber 30 through pipe 46, while the remainder is discharged to waste.
