Abstract
Procédé de préparation d'aliments, de produits de consommation et de fourrages en amines biogènes, caractérisé en ce que, au cours de l'une ou l'autre étape de la préparation de l'aliment, du produit de consommation ou du fourrage, on ajoute un micro-organisme provoquant une transamination ou une désamination de l'histidine ou encore, on ajoute une enzyme provoquant la transamination la désamination de l'histidine.
