Abstract

L'invention concerne un procédé de fabrication d'une pâte feuilletée. Le procédé, consistant à mélanger en une pâte de la farine, de l'eau, de la matière grasse, du sel, à former un pâton comportant une pluralité de feuilles de pâte superposées avec intercalation de couches de matière grasse, est caractérisé en ce que l'on forme ledit pâton en incorporant à la pâte de la matière grasse sous forme de parcelles solides réparties, puis en soumettant la pâte à une alternance de laminages sous forme de feuille, pour laminer progressivement les parcelles de madère grasse, et d'empilements de plusieurs épaisseurs de ladite feuille, pour amener progressivement le pâton à une structure où les parcelles de matière grasse laminees alternent avec des couches de pâte. Application à la réalisation industrielle de pâte feuilletée notamment pour des contenants pour préparations culinaires.
