Abstract
L'invention concerne des industries alimentaires. Elle a pour objet un procédé pour produire une viande reconstituée, suivant lequel : a. On traite les morceaux de viande au moyen d'une composition de salaison contenant une source d'ions phosphate pour imprégner la viande de la composition; b. On cuit les morceaux de viande pour faire coaguler la protéine de la viande; c. On enrobe les morceaux de viande cuite d'une colle comestible thermocoagulable stable à la chaleur; d. On presse ensemble les morceaux de viande enrobés; et e. On chauffe les morceaux de viande pressés pour faire coaguler la colle. Le procédé est préféré pour le traitement des viandes de boeuf et de mouton.
