Abstract

1293449 Shaped meat products SWIFT & CO 10 Aug 1970 [30 June 1970] 38358/70 Heading A2B A method for manufacturing shaped and formed precooked meat (including fish) products comprises (a) working precooked meat pieces to roughen the surfaces thereof, i.e. to tear the surface tissue fibres (b) adding a binding material to the meat pieces before, during or after step (a) in the minimal amount necessary to effect binding of the pieces, and (c) shaping and forming the meat pieces into a solid meat mass. The meat may be beef, lamb, pork, poultry, fish or tongue and may be cured by an injection or a soaking method. The meat may be worked by agitating or tumbling in a vacuum mixer. The meat may be shaped by stunting into a can or casing. The shaped product may be pasteurised or sterilised. The meat may be treated to remove exterior fat, heavy sinew, bruised meat and glands prior to cooking. The binding material may be gelatin, wheat gluten or a skin or meat tissue emulsion. Salt, sugar, monosodium glutamate, BHT, BHA, disodium inosinate and disodium guanylate may be added before, during or after step (a). In making shaped tongue products it is preferable to add a filler, e.g. an emulsion of tongue trimmings, to the tongue pieces to prevent voids being present in the finished product.
