Abstract
Procédé permettant de réduire la teneur et/ou le besoin en anhydride sulfureux de boissons, notamment de vins, et dans lequel la boisson est traitée avec un échangeur d'anions et l'échangeur d'anions peut être régénéré après échange de ses ions. La boisson est traitée par un échangeur d'anions fortement réticulé qui est chargé d'un acide faible inorganique ou organique de façon que l'échangeur d'anions soustrait à la boisson de l'anhydride sulfureux libre ou combiné, sans pour le reste influer défavorablement sur la composition de la boisson. L'invention est appplicable non seulement à des vins mais également à des mousseux, champagnes, vins doux, jus de fruits et autres.
