Abstract

L'invention décrit un procédé pour la production d'un dextrose anhydre en poudre contenant de grandes quantités de cristaux anhydres de bêta-dextrose, ainsi que le produit formé. On concentre des solutions aqueuses de dextrose jusqu'à une concentration en sucre de 90 à 98 % ; on ajoute des cristaux anhydres de bêta-dextrose, ou du dextrose en poudre contenant de grandes quantités de bêta-dextrose anhydre, comme germes cristallins à ce concentré à des températures supérieures à 60 degrés C; on maintient la température à une valeur supérieure à 60 degrés C et, tout en agitant modérément, on élimine l'eau libre par déshydratation sous vide (à partir du moment de la formation des micro-cristaux) par une réduction adéquate de la pression. Le procédé ne fait pas appel à une centrifugation et il donne une poudre pouvant se dissoudre rapidement dans de l'eau.
