Abstract
L'invention vise à perfectionner le procédé usuel de panification et notamment, à réduire la durée de la cuisson, en augmentant d'autant la productivité, par la combinaison nouvelle d'une rapide pré-cuisson transitoire de toute la substance des pains, avec une cuisson traditionnelle depuis l'extérieur de ces pains, mais très écourtée. L'invention vise en outre, à réaliser cette pré-cuisson << à coeur >> de façon encore beaucoup plus écourtée, par l'application nouvelle dans ce but, d'une ou plusieurs fours dits à << micro-ondes >> ayant cette caractéristique, de permettre grâce à un générateur d'ondes << ultra-courtes >> de l'ordre de 2 500 MHz, dit << magnétron >> d'engendrer directement et très rapidement de la chaleur, dans toute la masse de la pâte préalablement préparée et formée, de la façon usuelle.
