Abstract

L'invention vise, des fours automatiques perfectionnés, pour la cuisson rapide des pains de boulanger ou industriels, qui constituent de nouveaux produits industriels originaux, en ce qu'ils mettent en oeuvre des combinaisons de moyens et procédés, essentiellement caractérisés par l'interaction mutuelle, d'une courte précuisson transitoire, dans la << masse >> des pains, par l'effet d'un rayonnement par << micro-ondes >>, de l'ordre de une minute, et qui est à la fois précédé et suivi, d'une exposition des mêmes pains, à un rayonnement dit << infra-rouge long >>, ce qui permet de réduire la durée globale de cuisson, d'environ la moitié du temps de cuisson usuel, en réduisant d'autant la consommation d'énergie, tout en augmentant corrélativement la productivité.
